A Valentine Day Treat

I am a true romantic at heart which is why I write romance books. So, of course Valentine’s Day is a special day for my husband and me. Today I want to share my favorite treat for February. These pancake cups are delicious any time during the year, but they seem to fit perfectly with Valentine’s Day, especially since I make mine with cherry pie filling. They are so light and sweet that they melt in your mouth. YUMMY!
1 cup milk
6 eggs
1 cup flour
½ tsp. salt
1 tsp. vanilla
1 tsp. orange zest, optional
¼ cup butter, melted
Preheat oven to 400° F.
Blend the first 6 ingredients together with a hand mixer, and then add the butter very VERY slowly.
Grease muffin tins then fill them half-full with pancake mixture. Bake 15 minutes, or until fluffy and golden brown.
Once the cups have cooled, fill them with your favorite fruit. I prefer apple or cherry pie filling, but you could use pumpkin or blueberry.
Before serving, sprinkle a generous amount of icing sugar on top. I’ve sprinkled shaved dark chocolate on top of the icing sugar, but that’s just me. 😊

Tina now has thirteen romance novels on Amazon, and while all of them have undertones of a love story, they are different genres; murder, mystery, whimsical, witches, ghosts, suspense, adventure, and her sister’s scary biography.

The excerpt below comes from Chapter 1 of Koush Hollow. The sixteen-year-old main character, Jenna, seems to have a waking nightmare where an interesting creature appears, but only to her. Is it real or is it a dream?
Tap, tap.
My eyes flashed wide. A curvy, gray-haired lady tapped on my passenger side window. Jenna, snap out of it, I thought to myself. I breathed and remembered how to roll the window down.
“You okay, hon’?” She stared at my hands. “You’re shaking like you drank ten café lattes.”
“I’m j-just a little on edge. I mean, I thought I hit that…that woman.”
She jolted upright and looked around. “What are you talking about?”
My gaze flitted all around her. “She w-was r-right there—the painted woman,” I stuttered and pointed. “Where did she go?” My knees finally stopped knocking, allowing me to slide out of the car.
“You didn’t hit anyone. Are you on something?”
I stumbled to the front and bent over searching underneath the car. Nothing. No one. I stood up and scanned the sidewalks, but I didn’t see the mysterious woman anywhere.
“Maybe you shouldn’t be driving, hon’.”
Maybe I shouldn’t be.
“Is there someone I can call?” she asked.
I wiped my sopping wet forehead with the back of my hand. It had to be stress affecting me. It had been a tough few months and maybe it was catching up with me. I turned to the kind woman. “I’m only a few minutes from my mother’s house.” I’d get the Diet Cokes and vitamins later. “I’ll be fine. Thank you.”
We both returned to our cars. She waited for me to move. With trembling fingers, I managed to shift into drive. I pumped the brakes to see if they worked. They worked fine. The rattling sound in the engine was gone, too. I could hardly think straight. Was that Voodoo woman real or a figment of my imagination? I shoved aside the bad feeling, inhaled a calming breath, and decided to apply logic, which suggested the whole thing was a brain-glitch from stress. However, no matter how logical I tried to be, the uneasy feeling remained.
Leigh Goff writes young adult fiction. She is a graduate from the University of Maryland and a member of the Society of Children’s Book Writers & Illustrators (SCBWI).
Born and raised on the East Coast, she now lives in Maryland where she enjoys the area’s great history and culture.

This delightful paperback book is another wonderful collaboration from writer Tina Nykulak Ruiz and illustrator Ishika Sharma. This creative duo knows how to put life and fun into children’s books to encourage young people to read. As with all of Tina’s children’s stories, there’s a moral at the end.
Tina Ruiz was born in Germany, but her family moved to Canada when she was in grammar school. She began writing children’s stories when her own were little. Through the years Ruiz wrote twenty-seven books. Most of those stories went into readers for the Canada Board of Education. Two did not. Mayor Shadoe Markley is a story about a ten-year-old girl who becomes Mayor for a Day through a contest at school.
Little did Ruiz know that story would “change the world.” The book came out at early January 1988. By the end of that same month, everyone was calling the mayor’s office at City Hall, trying to get the forms to fill out so their children could participate in the contest. Thirty years later that same contest is still runs at full speed. And not only in Calgary, but all across Canada. The Mayor’s Youth Council is now in charge of the celebrated contest and invites Ruiz to attend and meet the lucky winner. It’s usually followed by a hand-written thank you card from the mayor himself. Recently Ruiz was invited to be part of the Grand Opening of Calgary’s New Library where the mayor shook her hand and introduced her to the attendees.

Swimming along, Velvet continued to send a friendly wave to every creature she saw. She rounded the corner of a huge coral reef and saw a murky, shaded part of the coral ahead. If she had a middle name, it would be Curious. Velvet thought nothing of swimming into the darkened water.
A naked man was swimming furiously to the surface, struggling and thrashing in a panic.
He thinks he’s drowning.
If his panic didn’t give him away as a visitor to the Dreaming, his energy did. She didn’t know many visitors, but she had met more than anyone else she knew. Why did she find visitors so compelling? She often wondered about that.
Once, she had shared a romance with a visitor. His name was Joe, and he was sixteen years old at the time. For one whole summer, that was what he called it, they spent all of his time in the Dreaming together. Then Joe admitted to her that he felt weird about having an invisible girlfriend, and they stopped seeing one another in that way. They were friends now. His heart thumping in his throat, Godwin took in all the details of the goblin’s appearance. The creature was probably four feet tall at most and was wearing a sleeveless leather tunic and short leggings over his skinny frame. His arms and legs were hard with thin bands of muscle; sinews moved like taut wires beneath the scant flesh. Godwin fancied that the goblin’s skin had a sickly, greenish tint, but in the firelight it was impossible to be sure.
The goblin moved in an awkward manner, not upright like a man or an elf, but slightly stooped and with bent knees, as though on the verge of pouncing. The dome of his head was as bald and smooth as a pebble, and his very long, pointed ears were attached on either side like those of a lynx. His large eyes glittered like wet malachite and between them a long, sharp nose protruded with all the aesthetic attributes of a small parsnip.
The goblin’s large eyes widened as they swivelled in Godwin’s direction, making his stomach curdle in fear and revulsion.
“Only two of you, then?” said the goblin with a smirk. “Not much of a challenge, is it?” He beckoned with his sword and others of his kind began to creep into the circle.
Godwin glanced around. There were six more of them, each carrying a sword of a curious design, the blade like a thin, metal spiral with a very sharp point. A visceral fear welled up inside him at the sight of these weapons, but he didn’t know why.
